Am making a triple layer carrot cake with mascarpone and whipped cream frosting ( you know the one!) and then sandwiched between the layers will be frosting and homemade carrot jam and a pile of walnuts and candied carrots on top

Had to adapt it slightly Helen
, my daughter has a severe nut allergy so I substituted ground almonds for ground rice.
Taste was lovely but results were a little bit disappointing regarding texture as I found it to slightly dry and a little bit grainy.
Would like to know of other substitutes for ground almonds if anyone has other ideas.

That sounds fab. I’m afraid I didn’t use the book last weekend but made Nigella’s chocolate easter cake (from Feast) instead. Very nice it was too!

It came out great and tasted delicious. The rosette piping looks so effective and I had lots of comments about it. I would highly recommend it.
