    Check out this link – I did an Introduction to Celebration cakes class on Friday. Loved it, and impressed with my results even if I do say so myself!

    Hi, yes mine seem fine so far – have been soaking them in brandy once a week! So they should be! The Caramel Christmas Cake sounds yum – I haven’t seen that book. Is the Caramel cake in there too?

    I have made my cakes this year using a Dan Lepard recipe on the BBC food website – what attracted me to it was the marzipan is made with pecans, and it is decorated with brandy butter icing. Thought it sounded a bit different.

      Hi Angela thanks, yes it does sound different and delicious too, I think it is the Black Christmas cake from his new Short & Sweet book that I am currently working my way through (yum). I see that it doesn’t require soaking fruit before baking and wondered if it would be moist enough, do you think yours look OK so far? I guess the weekly feed…[Read more]

          Hi – yes i think the soaking in brandy will make all the difference (we are in the caribbean so i think i will use rum) the short and sweet book is incredible, the caramel cake is in there but also on the guardian website as well – let’s swap notes after Christmas! thanks
