Baking with Joseph and Joseph – Fruit cake and date, sultana and coffee pudding.

Last week I had the sudden urge to make a light fruit cake. It was 6:30pm and I didn’t have the full list of ingredients that I needed. I also needed to soak the fruit overnight. So I dashed down to the local supermarket to stock up. What a refreshing walk it was, even in the dark and cold, it was quite refreshing. I must do that more often.

Soaking dried fruit

Soaking dried fruit is much easier when done in a shallow dish, like this one from Joseph and Joseph. It’s part of a nest of dishes, that you can bake, store and then freeze. My drawers and cupboards are full to the brim with all manor of baking things, so these make easy storage. They are not leak proof but with a few gentle shakes, my fruits were covered with zest and citrus juices that I left to soak overnight. The cake was a success and by the time it had cooled a third of it had gone. My husband loves his fruit cakes. Me? I’m not really a fan, if I’m honest. But I like to make them for him.

Date, Sultana and Coffee pudding.

Additional baking for the weekend, I wanted to make a pudding. Looking at what I had in my store cupboards, a date, sultana and coffee pudding, came to mind. This I baked in the 2.5L shallow oven proof dish. It just needed a light greasing with butter and the pudding was baked in no time. I’m able to keep and store the pudding in the same dish it was baked in. In fact it’s kept it really moist after 5 days. I made a toffee sauce to go with it.  You’ll find the recipe for both here.

The nest glass storage dishes come in 4 sizes and are so easy to store.

• Small container: 130ml –  12.7 x 9.3 x 4.8 cm (5 x 3 ½ x 2 in)
• Medium container: 550ml – 18 x 12.4 x 6.1 cm (7 x 5 ¼ x 2 ½ in)
• Large container: 1.3L – 22.8 x 17.5 x 7.3 cm (9 x 7 x 3 in)
• Extra large container: 2.5L – 28 x 21.5 x 8.4 cm (11 x 8 ½ x 3 ¼ in)

I keep them on my counter top for easy access. Sometimes when things are stored away, they are never used. These pretty coloured lids add a dash of colour to my kitchen.
