I am looking for a recipe (preferably for a chocolate cake) using breadcrumbs in place of flour. I want to make a gluten free cake and whilst I do have gf SF flour, I have a lot of gf bread to use up and can’t find a suitable recipe. Hello Ellen. I’ve found a recipe for a Decadent Chocolate Cake that uses breadcrumbs ( http://www.goodhousekeeping.co.uk/food/recipes/decadent-chocolate-cake ) and is based on Austrian Sachertorte. And this article from the Guardian has a few recipes for using up breadcrumbs, including a Walnut & Cardamom Cake, and a Golden Bread & Hazelnut Ice cream ( https://www.theguardian.com/lifeandstyle/2010/jan/31/nigel-slater-breadcrumb-recipes ). Hello, I have a recipe for using up stale bread that a french friend gave me many years ago. It makes a kind of bready pudding that I remember was delicious!
I loaf of bread broken into pieces
1 200ml glass or cup of sugar
1tsp mixed spice
Heat the bread, milk and sugar together in a saucepan until it forms a thick paste. Add the beaten egg, sultanas and spice. Pour into a loaf tin and dot with butter. Bake for about 30-40 minutes. Best eaten hot with custard!May 1, 2017 at 8:05 pm #98475

I went for the Good Housekeeping recipe (well my version of it using slightly more bread, less almonds) and made it in a square tin. I didn’t do the ganache but drizzled over a fudgy icing and stuck crumbled flake on top! I was really pleased as its so moist and delcious and you’d never detect the bread. 😉 I like the idea of the ice-cream as something a bit different and may well give it a go too.May 7, 2017 at 12:03 pm #98672
