Baileys Cheesecake Brownies

For the brownie

  • 200g Dark chocolate
  • 200g Unsalted butter
  • 250g Caster sugar
  • 3 Eggs
  • 125g Plain flour
  • 50ml Baileys

For the cheesecake

  • 280g Cream cheese
  • 50g Caster sugar
  • 1 Egg
  • 50ml Baileys

Dense squidgy cheesecake brownies – perfect for days when you can’t decide between the two!


    1. Pre-heat your oven to 160 degrees (fan)

    2. Line a brownie tin or 8-9 inch square cake tin.

    3. Melt butter & chocolate in a bowl over a pan of simmering water. Set aside & allow to cool a little.

    4. Make the cheesecake mix. In a bowl, mix the cream cheese with the sugar. Then add the egg and Baileys. Mix until combined, set aside.

    5. To make the brownie, in a clean bowl, whisk the eggs & caster sugar.
      Add the melted chocolate & butter and mix again.
      Sift over the flour and fold in.
      Pour the brownie mix into the prepared tin.

    6. Spoon the cheesecake mix on top if the brownie mix in dollops, and then create a swirly marble pattern with a knife. This is easier than you might think!

    7. Bake for around 40-45 minutes until starting to brown on top. The middle should still wobble. Allow to cool in the tin while you resist the amazing smell that is now filling your kitchen…
      When cold, cut into squares to suit your appetite!
