- 150g white chocolate (roughly chopped)
- 95g butter
- 4tbs double cream
- 250g plain icing sugar (sieved)
This white chocolate frosting is suitable for all kinds of cake toppings or fillings. Dust with a light coating of cocoa powder or finely ground coffee graduals to complement a coffee cake or chocolate cake.
Melt the chocolate, butter and cream in a medium heatproof dish over a pan of simmering water. Take off the heat and gradually add the icing sugar and beat together until smooth.
Leave to cool a little before spreading on top of your favourite cake or cupcakes.
