The theme this month, “Keep It Simple!” was perfect for this busy time of year as schools are winding down and summer is approaching. It is also a great reminder that baking delicious cakes doesn’t have to be a crazy, complicated, time-consuming affair! Seventeen of us (including a few guests!) met at TruFire in Southlake Town Square and enjoyed really yummy cocktails, wine and food before cutting into 12 very diverse and delicious — yet SIMPLE — cakes!
We also had to say “goodbye” to our dear friend, Heather! She has been a member of cake club for over 3 year and we will miss her!
Magic Cake – Laurie’s cake “magically” turns into three separate layers and tasted like silky vanilla flan with a light sponge cake top.
Valencia Orange Almond Cake – Elisha made a traditional Spanish cake (in honor of Heather!) with almond meal and a whole boiled and blended orange, simply dusted with powdered sugar. Oh, and it’s gluten and dairy free!
Chocolate Pudding Poke Cake – Christina and Pat made a vanilla and chocolate pudding cake covered with chocolate chips! This was so simple they even made a second cake to leave home for the kids!
Chocolate Surprise Cake – Clair’s husband James surprised her by baking this lovely chocolate cake with M&Ms inside! This simplest cake to bake is one someone else bakes for you! 🙂
Devil’s Food Buttermilk Cake with Dulce de Leche Glaze – Ellen made a rich, chocolatey Cake Mix Doctor cake. She dressed it up with her own dulce de leche glaze drizzled on top.
Rum Cake – Carol made a beautifully simple rum cake with toasted walnuts. Variations of this recipe have been popular at CCC over the past four years and they are always delicious!
Nathan’s Lemon Cake – Tanya’s lemon cake was tart and very lemony with a raspberry filling that paired perfectly for a fresh, summery cake.
Cinnamon Crunch Cake – Renee’s cake had warm cinnamon and spices and crunchy pecans and icing drizzled on top. Beautiful and easy!
White Chocolate and Rose Cake – To many, Deepa’s cake may not have seemed that “simple” but Deepa said it was easy to pull together! The flavors were wonderful — white chocolate cake with a delicate rose flavor from the rose water. The pink ombre and edible rose petals on top were beautiful!
Chocolate Cake with Chocolate Frosting – Lexie made a simple yet rich and delicious chocolate sheet cake with a homemade chocolate frosting.
Almond Cake with Cardamom, Rose Water and Pistachios – Carole’s flavor combination was simply delicious — spicy cardamom, sweet rose water and crunchy pistachios on top. Made with almond meal, this cake was also gluten free.
Stale Panettone Bread Pudding with English Custard – Steffi managed to fight off the jet lag from her latest Italian trip and baked a delicious bread pudding using stale Italian panettone. Of course, she brought a bottle of warm creme anglais to pour on top!
